Just substitute chicken broth with veggie broth and its all a totally vegetarian meal. It tastes just as good too.

What vegetarian would use chicken broth? None! I tried it with vegetable broth and it wasn't bad.

I loved this dish! It tasted fantastic. Be sure that you can replace chicken stock with vegetable stock :) It tastes just as good! I would highly recommend this to anyone who needs a quick meal. The only annoying part is chopping up all those veggies, but have your husband do it for you and it's a 10 minute meal! I also wanted to add that it's very filling. You really won't need anything else with it!
